Hypro TM GROUP Smart Wort Wort produced in the brew house is fermented to beer. Prior to fermenting the wort needs to be cooled from @ 97°C to @ 9 to 14°C depending upon the fermentation temperature selected by the brewer. Number of options and methods are available for cooling wort. Cooling In Breweries *Patent applied Double section heat exchanger Current schemes * Wort is cooled from 97°C to @ 37 to 38°C in the first section using ambient water at 32°C inlet and @ 80°C outlet. Hot water so generated is used in the brew house for mashing in, sparging, cleaning etc. The second section is the refrigeration section where the wort is further cooled from 37°C to 9°C by circulating ice water in the heat exchanger Or at times using glycol water. Here refrigeration effect is required. In the past and Ice Bank Tank was used to produce ice and thereafter ice water during the night hours when the power rates are low. This ice water is then used for cooling down of wort subsequently. Later on the double section heat exchangers were replaced with single section wherein the chilled water enters the cooler @ 2 or 3°C and leaves @ 80 to 85°C. The hot water so generated was used in the brew house. The chilled water required for wort cooling was generated by chilling down ambient temperature water to @ 2 or 3°C where refrigeration effect is required. Eventually it is also observed that part of the hot water goes down the drain owing to un-utilisation of its energy and volumes.
Hypro has evaluated wort cooling methodologies, refrigeration requirements for each scheme and most importantly the power units consumed for wort cooling. After evaluating the schemes and focusing on: 1. Lowest volume of water required for wort cooling 2. Lowest energy requirement to prepare water for wort cooling 3. Points 1 & 3 look contradicting each other but there are ways to still achieve both the goals and the solution is offered by Hypro. The wort cooling parameters on water side are totally redefined and result in energy savings to the tune of 10 to 22 % as compared to units operating currently.
