Healthy Meals and Snacks-French Toast • What you’ll need: 3 slices of bread, 1 egg, ¼ cup of milk • In a large bowl, whisk egg and milk until well combined. Preheat a non-stick fry pan to medium-high heat • Dip each slice of bread in the egg wash until coated on both sides and put straight into fry pan • Cook for 2-3 minutes each side until it is golden and easily separates from the fry pan • If the bread is sticking to the fry pan, cook it a little longer. You can serve this plain, buttered, or with your child’s favorite spread or cheese
Healthy Meals and Snacks- Mini Hotdogs • You will need: 6 bake at home mini rolls, 6 skinless cocktail frankfurters, ½ cup of grated cheese, and tomato sauce to serve. • Preheat oven to 220◦C • Place frankfurters in a saucepan of water, let simmer for 10 minutes • Meanwhile, place rolls on a pan or tray and bake in the oven for 5 minutes until they start to turn golden brown • Split rolls in half and fill them with some cheese and push in frankfurter • You can serve this on a large tray with tomato sauce
Healthy Meals and Snacks- Vegetable Soup With Pasta • You will need: 2 tablespoons olive oil, 1 large and chopped brown onion, 2 crushed garlic cloves, 3 medium peeled and chopped potatoes, 2 carrots peeled and chopped, 2 chopped celery sticks, 1 large zucchini that is halved and cut diagonally 1cm thick, and ½ cup of small pasta (such as little stars) • Heat oil in a large saucepan over medium heat • Add onion and cook for 3 minutes until it is starting to soften. Add garlic to cook 2 minute further • Add vegetables and stir to coat in onion and garlic mix • Stir in the stock and bring it to a boil, reduce heat to low and simmer uncovered for 10 minutes. • Add pasta and cook for a further 10 minutes until vegetables are soft • You can serve with bread and add salt and pepper if needed
Healthy Meals and Snacks-Apple Yogurt • You will need: 1 peeled apple that is cored and sliced thinly, ½ cup of water, and 1 cup of full fat yogurt • In a small saucepan, bring the apples and water to the boil and leave to simmer with the lid on for 10 minutes until the apple is very soft • Puree the apple and juices using a sieve or stick blender and leave to cool • In a bowl, combine the stewed apples with the yogurt and serve
Healthy Meals and Snacks:Fruity Chicken and Rice • You will need: 1 cup of cooked white rice, ¼ cup of cooked chicken breast that is finely diced, 400g tin of apricots in fruit juice • Drain the apricots and reserve the juice • Take half of the apricots and blend using a stick mixer • Add a little of the reserved juice id needed • Dice the remaining apricots • In a saucepan, place the rice with chicken, puree and diced apricot. Warm it gently and serve
Healthy Meals and Snacks:No Bake Coconut and Date Balls • You will need: 3 cups od desiccated coconut, and 2 cups (200g) of pitted dates • Please 2 cups of coconut and the dates into a blender or food processor • Process on high speed for 3-4 minutes, pausing to scrape down sides as needed. • Remove from processor and roll teaspoon sized balls • Roll in remaining 1 cup of coconut • Pack into portions for snacks and enjoy
Healthy Meals and Snacks:Zucchini Slice • You will need: 375g zucchini, 1 onion, 1 cup of self rising flour, 5 eggs, 3 rashes of bacon, 1 cup of grated cheddar, ½ cup of oil, and salt and pepper • Grate zucchini coarsely • Finely chop onion and bacon • Combine Zucchini, onion, bacon, cheese, sifted flour, oil & lightly beaten eggs • Season with salt and pepper and pour into well greased lamington tin • Bake in moderate oven for 30 to 40 minutes or until browned
Healthy Meals and Snacks-Ants On a Log • You will need: Peanut butter, celery, and raisins • Cut celery into bite size sticks • Spread peanut butter in crease of celery and place ants on peanut butter. • Refer to picture to see example
Healthy Meals and Snacks:Baked Sweet Potato Fries • You will need: 2 pounds of sweet potatoes, 2 tablespoon, 1 ½ teaspoons chili powder, 1 ½ teaspoons kosher salt • Preheat oven to 425ºF • Cut each sweet potato in half lengthwise and place it flat side down n the cutting board. Cut the potato halves into 1 inch wide wedges • In a bowl, combine the oil, chili powder, and 1 teaspoon of salt. Place the potatoes on a roasting pan and put the pan into the oven • Cook until the potatoes are soft (20-25 minutes) • Remove them from the pan and season with the remaining ½ teaspoon of salt
Healthy Meals and Snacks:Spotty Berry Pancakes • You will need: 2 cups plain flour, 3 teaspoons baking flour, 2 tablespoons caster sugar, 2 eggs (beaten lightly, 600mL buttermilk, 60g melted unsalted butter, 1 cup of berries, extra unsalted butter for greasing pan • Stir the flour, baking powder, ad sugar together in a bowl • Add the eggs, buttermilk, and melted butter • Whisk to combine • Gently add in berries • Heat a large nonstick fry pan over low-medium heat and melt ¼ teaspoon of butter on it. Pour 1/3 cup of pancake batter into the pan. Spread the mixture so that it is not more than one centimeter thick and cook for 2-3 minutes until bubbles appear on the surface. Turn the pancake over gently and cook for 1 more minute.
