HFCS • What is HFCS? High Fructose Corn Syrup is a commercially produced high fructose corn syrup. It is a liquid sweetener extracted from corn and is chemically altered to yield a different balance of monosaccharide ( simple sugar) than that found in ordinary corn syrup.
SUGAR • Sugar is regular table sugar or sucrose. Sucrose is a disaccharide • That is a compound sugar composed of two monosaccharide. Usually extracted from sugar cane and sugar beets.
HFCS • (High Fructose Corn Syrup)(HFCS) was developed in Japan in the 1970’s. It’s consumption has been increasing ever since. The use of HFCS has increased in equal proportion to the decreasing use of sugar. This is seen most dramatically in the US food market.(1000% between 1970-1990)
HFCS Fructose does not trip our sense of satiety as sugar would, we are perhaps eating more sugars to compensate. Thus dietary fructose is contributing to American obesity issues.

Why Talk About HFCS? • With the onset of the Federal Government’s concern for the increase in diabetes related to obesity • With requirement for all schools receiving federal funds for lunch programs to develop a Wellness Plan • Concern with one small piece of the puzzle • Encourage all to read food labels carefully
