What is a Leftover? A leftover is any food that was prepared for a meal but was not served to a student or an adult. If the safe food handling procedures outlined in this training are followed, and the recipe indicates you can save the food item as a leftover, a leftover may be safely served a second time. What factors should be considered when deciding to save a leftover? • Food safety (always #1) • Quality of leftover when reheated • Quantity of leftovers Click on the red arrows to go forward or backwards
Should 25 servings of hot dogs be saved? Example #1 • Is it safe to serve? If HACCP temps have been taken & recorded and time returned to refrigeration is recorded and the total time is less than 2 hours. • What will the quality be when reheated? Hot dog wieners should be good quality if the hot dogs were not pre-bunned. • Is the quantity reasonable? Should 4 servings of Chicken Nuggets be saved? Example #2 • Is it safe to serve? If HACCP temps have been taken & recorded and time returned to refrigeration is recorded and the total time is less than 2 hours. • What will the quality be when reheated? To Store: Hot Food Leftovers • Transfer hot leftovers to a chilled clean pan • Use the shallowest pan you can. • Loosely cover tray (or pan) with foil or metal lid. • Check the foil or cover to make certain that there is an opening to allow steam/heat to vent out. • Warm product must cool from 140o to 70o within 2 hours and from 70o to 40o or below within 4 hours. • Label foil or cover with product name and date. Use a permanent marker to write directly on the foil or write on masking tape if using a metal lid. • The date marked should be the date the food was prepared. To Store: Hot Food Leftovers Cont. 7. Place the leftover product in the walk-in/reach-in overnight. 8. Seal the pan the following morning. Click on the red arrows to go forward or backwards
What other products must be labeled? • A case of Chickenwich patties that are taken out of the freezer and placed in the walk-in for serving within a day or two should be labeled with the date. • The thawed chicken patties must be used within 5 days or thrown away. • Thaw ONLY the amount of food you will use immediately to avoid waste. What other products must be labeled? Cont. 4. You do NOT have to label a purchased unopened container of food such as yogurt. A Use-By Date is already stamped on the container by the manufacturer. 5. Once the container is opened, then the food must be date marked. After 5 days the food must be tossed. Click on the red arrows to go forward or backwards
