  3. Enzymes • “Lock & Key”Model • Active site- attracts and holds only molecules that have the right shape • Substrate-molecule that is changed by the enzyme; must have the right shape

  4. Enzymes • Heat can denature (misshapen) enzymes • Can be used again and again • Only need a small amount of enzymes

  5. Enzyme Example: Lactase • Lactose= sugar found in milk products • Lactase= enzyme that breaks down lactose
