Service Style • Gold Plate Service Style • Hold two plates, one in each hand • Serve first plate with left hand • Step to the left and move second plate to left hand • Serve second plate with left hand • Teams of 4 including one head server • Head Server: Seats 1 and 2 • Server 2: Seats 3 and 4 • Server 3: Seats 5 and 6 • Server 4: Seats 5 and 7
2) Stop at these seats, wait for head servers nod, serve with left hand Server 1: Head Server 1 2 8 7 3 Server 4 Server 2 6 4 5 Server 3
3) Step to left, wait for Head Servers nod, and serve next guest with left hand Server 1: Head Server 1 2 8 7 3 Server 4 Server 2 6 4 5 Server 3
Clearing Plates • Same process… • Walk to right of table • Stop at first seat, wait for head servers nod, clear with RIGHT hand • Step to left, wait for head servers nod, clear second plate with right hand • Exit left after Head Server
Coffee Service • After Dessert is served • Head Server will serve creamer to each table • Head Server and Server 2 serves Regular and Decaf to first table • Server 3 and Server 4 serves Regular and Decaf to second table • And so on

Remember… • Head Server always leads • Stay in order • Do not leave satellite kitchen to serve or clear until entire team is ready • Do not exit towards satellite kitchen • Exit towards bussing station • Be quick but professional • SMILE AND HAVE FUN
