  1. What Are Desi Cow Bilona Ghee And The Process When ghee is a part of your diet it’s beneficial for your health. Ghee is medicinal and works as a cure to many health problems like indigestion and is great for your immune system. Why include ghee in your diet? Desi Ghee not only adds flavor to your food but it makes your food balanced. Ghee is also rich in Vitamin A and E. Ghee also plays an important role in your diet, because it is medicinal. Pure desi cow ghee contains fats that provide energy to your body. A spoonful of ghee in your diet daily can do wonders for your health. Ghee is also used in the worship of Gods and Goddesses. Ghee made by using traditional bilona process: Did you know there are various ways to make ghee and the traditional method of making ghee is called bilona. It is quite an elaborate process. First cow’s milk is boiled and cooled. Later a spoonful of curd is mixed in the milk properly and is kept overnight at room temperature. The curd is churned to extract butter from it. This butter that has been extracted is boiled till the water evaporates and leaves behind pure ghee. The traditional method of setting curds is done in earthen pots. Churning during the bilona process is done with wooden made instrument called ravaiya in an earthen pot. Ghee made in this way is pure bilona ghee. This is the traditional method of making ghee. All of this is made at home without the use of machines. The commercial method of making ghee: The traditional method is used to set ghee by using earthen pots. To fulfill the expanding demand for ghee, companies use automated machines to churn out huge amounts of ghee in a few minutes. This production process continues the entire day and it fills many bottles to mass-produce ghee. Now millions of people depend on this commercially manufactured ghee. Making ghee at home is a lengthy process and involves a lot of effort. In today’s busy life, people have stopped making ghee at home, especially in urban areas. Thus, they choose ghee sold in grocery stores. Some famous brands are guilty of making ghee from malai or cream obtained from milk instead of curd. When ghee is made in this manner it takes lesser time and gives better milk to ghee ratio. But the flip side is that it cannot be digested easily.

  2. There are many methods used to make ghee from milk but the bilona churned method is the oldest method and also called a Vedic ghee making method. Why Desi cow Bilona Ghee is Costly? Bilona Ghee ( pure desi Gir cow ghee), prepared by the bilona churning method, is costly than the ghee prepared with Commercial method where companies use machines and chemicals to prepare ghee. In bilona churning method ghee making procedure we make ghee by hand churn method and 20 to 25 Ltr is used to make just 1 KG of ghee. Which make Ghee price a little expensive than the other ghee available in the market. There are three processes of making ghee. Let us understand them: From butter: You would take 20 minutes to extract butter from milk and later 20 minutes to melt the butter to get ghee from it. From cream: To extract cream from 500 liters of milk it takes 1 hour. This cream is later heated to get ghee. From yogurt: It is believed that Lord Krishna was very fond of this ghee as it fuels intellectual powers and leads to spiritual development. Yogurt is made from the milk then yogurt is turned to makkhan or butter using bilona method and then makkhan is turned to ghee according to the traditional method. The directional churning process boosts the medicinal properties. People who have a problem with dairy products like milk, curd, cheese, paneer, etc should try eating bilona ghee because it is casein free. There are many health benefits of desi cow ghee.
