Punjabi Samosa Recipe For the dough, mix maida, ajwain, salt, a little oil and water and knead the mixture into dough. Set it aside for 10 minutes. Finely chop some chillies, fresh ginger and coriander leaves. For the filling, in a pan, heat some ghee, add cumin seeds and let them crackle. Add ginger and saute. Add mashed boiled potatoes, turmeric and red chilli powder, the chopped coriander and chillies, cooked green peas and salt to taste and mix well. Roll out dough after dividing it into small gumball sized balls. Place the filling in the centre of the rolled out dough and fold into a samosa. Heat a pan full of oil. When it is fuming, add the samosa and let them fry till they are light brown. Serve with green chutney.
Chicken Cutlet Recipe In a mixing bowl, add minced chicken, finely chopped onions, chopped green chillies, ginger garlic paste, and spices like turmeric, red chilli powder, chat masala powder, garammasala and salt to taste. You can add fresh coriander leaves to the mix. Mix well. Spoon by spoon add flour to the mix and kneed it into a soft dough. Leave it for 10- 15 minutes. In a shallow pan, heat some oil. When oil is hot, place patties made out of the dough, and shallow fry until they are cooked. Serve with ketchup or green chutney.
Vegetable Spring Roll Recipe For the filling, heat oil in a frying pan. Add finely chopped cabbage, carrots and capsicum and fry well until they turn crunchy. Add soya sauce and vinegar to the vegetables. Add spring onions, crushed pepper and salt to taste. Add cooked noodles to the stir fried vegetables. Saute for a few minutes and take off the heat. For assembly, use premade spring roll sheets that are easily available in the market. Place a spoonful of the filling on one side of the sheet and roll the sheet. You can use water to seal the roll. Heat oil in a pan. When the oil is fuming, add the rolls one by one and fry them until they are golden. Serve with schezwan sauce.
