INGREDIENTS • 2 1/2 gal Broccoli, chopped, frozen, thawed, drained • 2 1/2 qts Ranch Dressing • 8 lbs fat free Cream Cheese, softened • 100 (10-inch) flour tortillas • 14 ½ lb. sliced turkey breast, deli • 4 lbs sliced lowfat Cheddar Cheese Have Fun: FOOD! Rappin Turkey Wrap INSTRUCTIONS: 1. In a large bowl, combine chopped broccoli and ranch dressing. Toss mixture until it is well blended. Set aside. 2. With a metal spatula, spread 1 Tbsp. of cream cheese down the center of each tortilla. 3. Place 2 ozs. Of sliced turkey and 1 oz. of cheddar cheese in a layer on the cream cheese on each tortilla. 4. For each tortilla, place 1/3 cup of the broccoli mixture on top of the meat and cheddar cheese. 5. Spread the broccoli mixture out so that is even. 6. Starting at the bottom edge of each tortilla, roll it up tightly. 7. Cut each wrap crosswise into 1 1/2 inch-wide pieces or cut them diagonally in half. TIP: They can be refrigerated until serving.
