  3. Mashed Potatoes 2 Russet Potatoes 1 c. Heavy cream Salt & Pepper t.t. (to taste) Peel the potatoes and rough cut • Place pot of water and boil till completely cooked • Drain water • Add ½ the cream and mash with potato masher or wire whisk; add more cream if needed • Season with salt & pepper

  4. Apple Raisin Chutney 1 Granny Smith Apple peeled and diced ½ c. Raisins or Dried Cranberries ½ cup sugar ¼ c water or apple juice • 1 cap Apple cider vinegar • 1 pinch of cinnamon or season to taste • Salt t.t (to taste) • Combine remaining ingredients and reduce till thickened

  5. Seared Pork Chops 1 T. Olive Oil 4oz pork chops Salt, pepper, granulated garlic to taste Method: • Get your sauté pan hot till it begins to smoke • Place the pork chops in the pan and sear for 1-2 minutes • Turn over and sear the other side • Place in a 350 degree oven and bake till a minimum of 140 degrees F. • Remove let rest 5 minutes • Serve with Apple Raisin chutney, mashed potatoes and carrots

  6. Carrots • Cut carrots thin on a bias • Saute in olive oil till tender • Add butter salt and pepper t.t.

  9. Banana Nut Bread 1 ½ cups sugar 2 eggs 1/2 cup butter 1 teaspoon vanilla 3 large very ripe bananas 1 ½ cups flour 1/4 teaspoon baking powder 1/2 teaspoon baking soda 3 large very ripe bananas 1/2 cup nuts

  10. Method • Cream sugar, eggs, and butter. 2. Add the vanilla and bananas 3. Add the flour, baking soda, baking powder which have been siftedtogether.   4. Add the chopped nuts 5. Pour into a greased cup cake pan. 6. Bake at 325°F degrees for 20-30 minutes.
