Lemon Rice RECIPE

INGREDIENTS • 1 cup rice • 1 onion, sliced • 3 4 green chillies, slit and chopped, Fresh ginger, sliced and finely chopped • 3 4 tbsp oil • 1 tsp mustard seeds • 8 10 curry leaves • 1 tsp urad dal • 1 tsp chana dal
INGREDIENTS • ½ tsp turmeric powder • ½ tsp asafoetida • ½ tsp lemon zest • 1 tsp lemon juice, Fresh coriander, finely chopped, Salt to taste, Water as required FOR GARNISH : • Coriander sprig • Lemon wedge
Take some rice in a bowl. • Wash it and strain the excess water off. • Pour water in a pan and add rice to boil. • Add some salt in the rice. • When cooked strain the excess water from the rice. • Slice an onion.
7. Slice the green chillies and then finely chop them.8. Slice the ginger and then chop it finely.9. Heat oil in a pan.10. Add some mustard seeds.11. When the seeds splutter add some curry leaves, urad dal, chana dal, chopped green chillies, ginger and sliced onion.12. Add a little turmeric powder and asafoetida.
13. Add rice to this masala and mix. 14. Add some lemon zest and a little lemon juice to the rice mixture. 15. Add a little salt and chopped fresh coriander and mix again. 16. Transfer the lemon rice to a plate. 17. Garnish it with coriander sprig and lemon wedge.
