They contain protein, water, vitamins C and K, magnesium, and potassium despite their high-water content, which makes them perfect for this soup. Gazpacho, a cold soup made of raw, blended vegetables, is a refreshing way to enjoy cucumbers. Instructions: 1. Finely chop half a cucumber into uniform pieces and set aside. 2. Roughly chop the remaining cucumbers snd place them in a high-speed blender. Add the cilantro, shallot, garlic, vinegar, coconut cream, ginger, salt, and pepper. Pulse to blend until well-combined. Transfer to an airtight container. 3. Refrigerate to marinate for 15 minutes. Stir again just before serving and top with the reserved chopped cucumber. SERVING TIP: Serve this soup as a light appetizer to a more traditional dinner.
