Post boiling, keep it aside till it reaches room temperature. •Add everything from the ingredients except for the oatmeal, boiled rice and crushed cornflakes the mashed potato and mix well. •Post mixing everything nicely, add the oatmeal and boiled rice to the potato mixture and mix again •Start making the cutlets by diving the mixture, rolling them into balls and flattening them into cutlets. •To make the cutlets crispier, spread some crushed flakes onto a plate and coat cutlets with them •Pre-heat your air-fryer and once preheated, place the cutlets in it. Air-fry them at 180 for 15-20 minutes while turning them around twice to evenly cook them. •If in case you do not have an air fryer, take a wide non-stick pan and heat 2-3 tbsp of olive oil in it. •Place the cutlets in the pan and shallow-fry them on low- medium flame until they are roasted to light golden brown in colour on both sides. •Serve hot with the sauce of your choice. LEONARDO OLIVE OIL Ingredients: 1 cup of basil leaves, loosely packed 1/4 cup of pine nuts 1/4 cup grated Parmesan cheese 1 clove of garlic 1/2 cup Extra Virgin Olive Oil Salt to taste Method: In a food processor add every ingredient apart from the extra virgin olive oil and pulse a few times to coarsely chop the ingredients. Post this, put the food-processor on a low speed setting and drizzle in the extra virgin olive oil slowly. Do this till the time the mixture becomes a paste.
