Refreshment Factor Crisp = acidity Less strong, more neutral in terms of flavour Temperature, cooler is better In fact, for “bargain” wines, cold is key
Other Key Definitions Dry = little or no sugar “Off-dry” = some noticeable amount of sugar Tannin / Tannic – tannins are the gritty, grippy components that stick to your teeth and gums – think strong black tea with no milk Acid – measured by how much your mouth waters, or doesn’t, when drinking a wine

Professional Tips: Chilling Don’t just add ice to your ice bucket, use a mixture of 50/50% ice and water – the additional surface area of cold will chill the bottle faster Add a ¼ cup of salt to your water and give it a quick stir before adding the ice - salt water chills to a colder temperature Any red will be more refreshing if you put it in the fridge for 15 minutes before serving it “cellar temperature”
