Sauerkraut. Alex Plaster. How is it made?. Chop up cabbage while sprinkling salt on the cabbage. Add other vegetables such as carrots. Press into dish, cover snugly, wrap in a cloth to keep out flies. Push down on covering to force water out of the cabbage.

How is it made? • Chop up cabbage while sprinkling salt on the cabbage. • Add other vegetables such as carrots. • Press into dish, cover snugly, wrap in a cloth to keep out flies. • Push down on covering to force water out of the cabbage. • After a day or so, check the kraut and scrape off any mold. • If it tastes good it is ready, if not let it sit more.
The Bacterium • Leuconostocand Lactobacillus are two types of bacteria used to make sauerkraut. • Lecunostoc is the bacteria that starts the whole fermentation process. • Lactobacillus (meaning acid loving milk bacteria) helps reserve the sauerkraut and aid in its digestion.
