Standard Components The use and importance of standard components in Food Production Ref p57/58 AQA D&T Food Tech2009
What is a Standard component • A standard component is a pre-prepared item or ingredient that is used in the production of another product • In industry, one manufacturer may buy standard components from another manufacturer. This has advantages and disadvantages
Examples Ideas?
.......Examples • Pizza Bases • Ready-to-roll icing • Stock cubes • Sauces for pasta • Ready made pastry • Fruit fillings for pies • Marzipan • Cake Decorations • Grated Cheese • Dried herbs
Using a Standard Component ensures that.... • A standard shape e.g. bought pastry case • A standard size or weight e.g. bought pizza base • A standard flavour e.g. stock cubes • Accurate proportion and ratio e.g. packet sauce mix for cheese sauce
Before using a standard component a manufacturer will check.... • Whether the product has additives e.g. Artificial colours and flavours • The nutritional profile of the product • The source of ingredients e.g. Air miles, use of organic ingredients • Sensory qualities e.g. Taste, texture, appearance
Advantages • Ensures consistency of flavour / texture • Saves time • Can speed up the manufacturing process • Less effort and skill required by staff • Less machinery and specialist equipment required. • Less risk of cross contamination • Can save the manufacture money • Components van be brought in bulk • Specific requirements of companies can be met • A wider range of products can be produced from the same standard component.
Disadvantages • Depending on another manufacturer can be less reliable e.g. if manufacturer 1 has a power cut and they can’t bake the bread for the 2nd manufacturer who makes sandwiches, there will be a delay in production • It can be more expensive • The sensory qualities of the components may not be as good as you wish • A lot of storage space may be required • Special storage conditions maybe required • Time required for ordering and supplying • Quality may not be as goOdas you wish
