Tamarind tree • Tamarind tree produces edible, pod-like fruit called tamarind or Tamarindus indica . • Belongs to the dicotyledonous subfamily Caesalpinioideae (Leguminosae). • Tamarind tree has Red and yellow elongated flowers . • Grows in more than 50 countries of the world • major areas of production are in Asian countries like India, Bangladesh, Sri Lanka, Thailand, and Indonesia, and in the African and the American continents. • Mature tree may attain a maximum height of 30 m. • Tamarind tree has the ability to grow in poor soils because of their nitrogen fixing capability and withstanding long periods of drought makes them ideal low input, high yielding trees.
Tamarind Fruit (Tamarindus indica) • Tamarind included in Leguminoseae family and Caesalpinioideae sub family. • Genus Tamarindus is a monotypic taxon having only a single species. • Fruit is an indehiscent legume called pod. • The fruit has a Flesh juicy acidulous pulp. • Tamarind pulp is rich in pectin and contains organic acids. • High in tartaric acid, sugar, B vitamins and calcium. • Fruit is used extensively in cuisines around the world and other uses include traditional medicine and metal polish. • India is the largest producer of tamarind.
Tamarind seeds • Tamarind seeds comprise 35% husk and 65% white kernel. • Tamarind seeds are rich in polysaccharide. containing (65- 72%) and seeds also contains lipids 6%, carbohydrates, fibres, oils, sugar, glucose, xylose and galactose units. • Tamarind seed is an underutilized byproduct of the tamarind pulp industry. • Natural hydrocolloid source containing starch and gum. • Seed coat is tannin-rich. • Tamarind seeds exhibits gel characteristics. • Cheapest available non-edible starch. • Tamarind are also rich in protein and have several amino acids , its a cheap of protein to alleviate protein malnutrition. • Tamarind seed contains Oil -7.6%, • Protein -7.6%,Crude fibre -1.2% , • total Ash -3.9%,Acid Insoluble Ash-0.4%,Moisture7.1%.
Tamarind seed husk • Tamarind seed husk is brown outer shell is obtained after roasting seeds and seed husk constitutes 35% of tamarind seed weight. • Tamarind seed husk contains 20-23% fibres and high content of polymeric tannins. • Seed husk works as fish poison. • Tamarind seed husk used as bio mass fuel and cattle feed. • Tamarind Seed husk contains upto 23% Tannins, which can yield good tanning properties in leather industry
Tamarind kernel powder /tamarind seed powder /tamarind seed gum Several phases are included in manufacturing Tamarind kernel powder: • Sorting-Specific technique is used to clean the kernel and discard any kinds of dirt. Cleaner machine include screen that is always trembling and aspirating to throw away small rather than large dirt (Beckett, 1994). • Roasting-Roasting is a means to decrease water level and to soften the shell such that shell separation from endosperm during winnowing process is easy (Ranken, 1993). One separation alternative is by roasting in 1500C for 15 minutes to make it brittle and then easy to separate by winnowing (Gerard, 1980). • Stripping-Stripping is designated to eliminate the undesirable parts, or the parts that cannot be consumed (Makfoeld, 1982). Stripping phase is easy phase because tamarind shell and kernel (cotyledon) have different hardness degree where the shell is drier and more brittle (less solid) than the kernel (Rao, 1983). • Separating–Separating shell from kernel (cotyledon) is compulsory because human must not consume the shell. Separating tool (winnower) is designed to separate shell from the kernel and collect it separately by aspiration process. Winnower design is based on 2 conditions, that is, include the roasted kernel become dry and brittle and the shell become lighter and less solid than the kernel.

Grinder then smashes separated kernel from the shell and to change it into powder with desired smooth degree (Rao, 1983). • Screening-When tamarind seed powder is used as thickener, the thick liquid without clod is more desirable. It should be ensured that powder has been well separated before it is heated in liquid form (Charley, 1970). The use of tamarind seed powder as thickener is depended on the purity and the provision of demanding size. Whole tamarind seed powder should pass 150-300 mesh screen. Such tamarind seed powder specification will produce good result (Rao, 1983). • Packing-Tamarind seed powder is produced, and then packed in water resistant package. Overheat and over humidity should be avoided. Packed tamarind seed powder is saved in dry space such that it can be stored for long period.
Tamarind kernel powder /tamarind seed powder /tamarind seed gum • Tamarind kernel powder is rich in polysaccharide and protein content. • Tamarind xyloglucan, commonly known as “Tamarind gum” is the major component of tamarind kernel powder . • Tamarind kernel powder is a highly branched carbohydrate polymer. • Tamarind seed gum is composed of glucose, xylose and galactose in a ratio 3:2:1. • Tamarind kernel powder is a rich source of xyloglucan gum. • Tamarind kernel powder is natural polysaccharide. • Powdered from decorticated seeds. • Starch made from tamarind seeds is non-edible. • Carboxymethylation of tamarind kernel powder is carried out to wider the usage of application. • Tamarind Pectic contains Ash 2-3%,calcium pectate 70-80%,Methoxyl 7-9% and uronic acid 43-45%.
