How to make this savory selection Birch beer being made in the traditional method; distilling • Please note that birch beer is non-alcoholic. However, when fermentation occurs, it is an alcoholic beverage. • Differences between the two types. • Non-alcoholic • In regular birch beer, sap is collected from birch trees and distilled into birch oil. • Alcoholic • The same sap is fermented instead of distilled.
Making • The process for making birch beer in either way is fairly simple. However for our purposes, we are going to concentrate on is the fermentation method. • Start by having the following ingredients • Yeast • Rye Bread • Honey • Birch Sap • Birch Twigs • Now the process begins • Start by placing the birch twigs into a crock big enough to contain the twigs • Next place the birch sap and honey into a separate kettle • Boil the sap and honey • Pour the boiled sap and honey into the crock with the birch twigs • Remove twigs • Toast Rye Bread • Place yeast on top of toast • Place the toast on top of liquids in crock • SEAL crock and allow fermentation to take place.
Fermentation Begins The process of fermentation • Above is the chemical formula for Fermentation. Now I will explain the process. • Sealing the crock will allow no oxygen to be present, implying an anaerobic fermentation process. • This process allows cells to convert NADH to NADH+ by passing high-energy electrons back to pyruvic acid. • The equation of alcoholic fermentation after glycolysis is as followed: Pyruvic Acid + NADH→C2H5OH + CO2+ NAD+. • Here is the process of fermentation of glucose: C12H22O11+H2O + invertase →2 C6H12O6C6H12O6 + Zymase → 2C2H5OH + 2CO2 • The yeast that is used in this fermentation is your typical, store-brought yeast.
