  4. To set the oven to a predetermined temperature before starting to mix ingredients • Turn on • Set • Preheat

  5. To cook over hot coals: • Garnish • Grill • Grind

  6. To cook over boiling water • Summer • Saute • Steam

  7. To melt sugar slowly over low heat until it becomes brown in color • Dissolve • Garnish • Carmelize

  8. To cook in hot shortening • Deep-fat frying • Melt • Fry

  9. To cook vegetables in small amount of fat usually until transparent • Poach • Puree • Saute

  10. To decrease the amount of liquid by boiling • Reduce • Reuse • Recycle

  11. To trim with small pieces of colorful foods • Garnish • Grill • Grind

  12. To work with the heel of the hand with a pressing folding motion • Reduce • Flake • Knead
