How Safe is the Meat we EAT? • Students on today we will begin a week long lesson, studying the past and current history of the meat market. We will identify the current issues surrounding how meat is packaged and the standards the FDA has set for the distribution of meat. Additionally, we will investigate the food borne pathogens that are being found in the meats being purchased by consumers.

How Safe is the Meat we EAT? • As we investigate the current problems surrounding Americans regarding safe handling issues and the prevention of food borne pathogens we will create a time line of the changes in the production of meat from the producers to consumers, specifically looking at the rise and fall of the Chicago Stockyard.
