In this respect, it is similar to serviceberry and other edible landscaping plants that are usually unnoticed or overlooked by most people. Harvesting &Foraging The window for harvest varies by around 6 to 8 weeks by location and cultivar in question, so it is important to learn to recognize when a good window for harvest has arrived in your area. Also, some of the most commonly mistaken plants have very different life cycles than elderberry, so knowing the elder’s general habit in your area helps ensure you won’t forage the wrong food! Preserving Elderberries Now that you have collected your elderberries, what will you do with them? Elderberries are easy to preserve. Note that they don’t keep well at room temperature once picked within a day or so, they will degrade substantially in quality. Depending on your equipment and space, you can prepare them for later use in numerous ways. Also, you don’t have to preserve elderberries before using them. Fresh elderberries can be used to make syrup, jelly, and many other things right off the bush! Preparation Methods Elderberry has a long history of many preparation methods, some more culinary or celebratory in nature, some more medicinal.
