Background: • Metrochemcompany is an established food processing plant with qualified personnel located in Mwanza. • Selling to supermarkets and local vendors • Mwanza is amongst the fast growing cities in Tanzania. • Export possibilities in Africa markets • Recent efforts by developing partners in poverty reduction program (e.g. SNV) has led to increase in production of tomatoes in Mwanza region. • Metrochem is threatened by high competition in tomato source market (imported tomato souses and the eruption of local tomatoes souse processing firms)
Purpose • Need to produce safe and traceable tomato sauce • Be competitive in tomato sauce market in the country • Penetrate the export market
Goal and objectives • Export of quality and safe tomato sauce • Be competitive in tomato sauce market • Operational HACCP in place • Operational Traceability in place • Certified with ISO 22000 • Contract tomatoes farmers • Market development
Actions • (Which actions must be taken during the project?) • Brief presentation to company management on standards and their requirements
Actions continued • Mobilize resources • Budget for materials required (personnel, stationeries, time) • Solicit standards from TBS, Bureau Veritas\SGS • Obtain pesticides standards (required type and quantities) • Selection of HACCP team • Train the HACCP team and management personnel • Prepare a proposal for fund raising for market development (market research, packaging and promotion) • Submit the proposal to SCF • Contact SNV for training possibilities on the proper use of pesticides
Actions continued • Design and development HACCP and traceability system (using on job training approach) • Terms and definitions for HACCP, Traceability and ISO 22000 • Checklists development • Identify and analyze potential hazard • Determine critical control points • Establish critical limits • Monitoring system • Corrective action • Verification procedures • Documentation and recording procedures • Develop codes for traceability
Actions continued • Train company personnel according to the developed manual • Implement HACCP and traceability • Conduct operational trials for HACCP and traceability • Develop inspection checklist for farmers • Identify and contract farmers as suppliers of fresh tomatoes • Train contracted farmers on required type and levels of pesticides • Request for pre-auditing from Bureau Veritas\SGS or for inspection by TBS • Work on non-conformance • Certification by Bureau Veritas\SGS
Criteria of success • ISO 22000 and traceability Certificates • Improved company sale figures (both in volumes and values) • Export
