The first and the most crucial step of malting is steeping in which the grain kernel is cleaned and brought to life with water and oxygen. This is done by immersing the grain in water, followed by an air rest period that allows the water content of the grain to increase. The concept of steeping is very much like how you water a seed to let it grow and is necessary to provide hydration to the barley seed to start the growing process.This program usually lasts for 2 days, where the moisture content is raised to an average level of 45 percent.
