  1. 維生素A之定量分析及對大白鼠體內脂質代謝的影響維生素A之定量分析及對大白鼠體內脂質代謝的影響 • 各種營養中,維生素A 可能對癌症有保護的效果,由動物實驗發現維生素A 及其衍生物總稱Retinoids 可以預防或延緩幾種實驗性的腫瘤,如皮膚癌、肺癌、膀胱癌等。在動物實驗中餵予高劑量的Retinyl ace-tate或Retinoic acid 時卻可變了脂質於體內的代謝,誘導了高三酸甘油酯血症(hyperiglyeridemia) 現象,因此長期服用維生素A 所帶來的副作用需要相當的注意。由國人的飲食調查發現,國人的動物性維生素A 來源食物-肝臟,佔重要之比例。因此本研究主要的目的在於探討不同來源維生素A ,以及食用時間長短大對於大白鼠體內脂質影響和維生素A 利用率的評估。雄性Sprague-Dawley大白鼠分別餵食含五倍建議量維生素A 之飼料,於飼養後的第一、二、三分別犧牲大白鼠,取血液及肝臟,測定血清和肝臟中總膽固酸、三酸甘油酯含量,同時利用HPLC分析血析和肝臟中維生素A 。結果顯示;餵食豬肝組其肝臟中維生素A 含量高於餵食補劑組(P<0.05);而血清和肝臟中三酸甘油酯含量豬肝組低於補充劑組(P<0.05);血清和肝臟中總固膽各組各週皆無明顯變化(P>0.05)。本研究結果顯示:攝取豬肝來源之維生素A 其體內利用情況較攝取補充劑為佳,且在三週餵養期間不易導玫三酸甘油酯上升的不良現象。
