What is Domaine Gayda? • Domaine Gayda is….. the Spirit of the Languedoc • Domaine Gayda is arguably the most innovative wine operation in the Languedoc combining the best of the Old World terroir and traditions with New World techniques. • Domaine Gayda is passionate about seeking out the best parcels of vines, the best climates and the best growers – together the best terroir – and using ultra-modern facilities and techniques to create superb wines without being overly restrained by appellation restrictions. In addition to 18 ha of vineyards in Brugairolles and the famous La Liviniere region of Minervois, we have long term relationships with a series of growers in the most interesting parts of the Languedoc who have been selected for the quality and age of their vines and the rigor and knowledge that they bring to their viniculture. • The approach to viniculture is to intervene as little as possible to allow the vineyards to fully express their potential. All the grapes for the estate wines are hand-harvested and carefully selected both in the vineyard and in the winery, refrigerated trucks are used to move the fruit from the vineyard to the winery, fruit movement within the winery is gentle and kept to a minimum and the wines are filtered as little as possible to retain maximum intensity. • The winery and all the equipment in it are brand new. Quality control, rigor, attention to detail and traceability are second to none and the flexibility and customer focus of all the personnel truly set Domaine Gayda apart.

Three Winds - Reds • Syrah – 2006 “88” Wine Spectator rating – July 2008 Red fruit and a hit of spice on the nose. Soft tannins give this medium bodied wine with plenty of structure, a classic Syrah palate. Subtle oak nuances help to smooth out the long finish. 30% stored in old French oak. 13.3% alcohol. • Pinot Noir –2007 Classic cherry notes with red fruit, very typical of the variety. Smooth on the palate with subtle oak nuances round off the great mouth feel and long finish. 20% stored for 6 months in old French oak. 13.0% alcohol.
Three Winds - Whites • Sauvignon Blanc –2007 Tropical fruits and melon on the nose, with a crisp, lively palate. Good acidity and clean finish. Pneumatic press, cold fermentation. 6 months on the lees in stainless steel tanks. 12.7 % alcohol. • Chardonnay – 2007 Soft, Round and creamy with flavors of melon, pear, apricot and a mineral smoky character, smoothened by the French oak ageing. 20% aged 6 months in old French oak. 80% aged on the lees in stainless steel tanks. 13.27% alcohol.
