Borne means carry. Foodborne means carried by food. Foodborne illness refers to illnesses that are transmitted to people by food. It is another term for food poisoning.
Food poisoning can occur when… • bacteria, viruses or other pathogenic microbes (germs) contaminate food; • chemicalsaccidentally get into food; • when someone with a food alllergy eats a food they are allergic to.
In this lesson, you will learnabout two types of foodborne illness: microbiological food poisoning and chemical food poisoning.
Micro-organisms arereally smallliving things. Microbiological food poisoning is caused by: • Bacteria • Viruses • Fungi • Parasites
Most food poisoning is caused by bacteria. Bacteria are micro-organisms.
Symptoms of bacterial food poisoning include: Diarrhea, stomach cramps and vomiting. Next
How long it takes a person to get sick depends on the type of bacteria that made them sick. It also depends on how much bacteria – a little or a lot – was in the food the person ate.
Salmonella Symptoms occur 6 to 72hours after eating contaminated food.
Meat and meat products such as roast beef, meat pies, sausage, ham, poultry (chicken), milk and eggs. Foods that can contain salmonella are: Especially cracked eggs.
E.Coli 0157 Symptoms occur 3 to 10 days after eating contaminated food.
Foods that can contain E.Coli are: Raw meats such as ground beef, poultry, pork. Unpasteurized milk. Contaminated water.
People can also get food poisoning from viruses in food. Viruses are micro-organisms.
Examples of viruses are: Hepatitis A Norwalk Virus Influenza
Food poisoning can also be caused by fungi. Mold is one example. Mushrooms are another example. Can you see the resemblance?
Fungi sometimes produce toxins (poisons) that cause food contamination.
Finally, food poisoning can come from parasites. A parasite lives off its host. Worms in pets or people, for example.
QUIZ!Can you remember the four kinds of micro-organisms that can cause food poisoning?
1. Bacteria 2. Viruses Well done! 3. Fungi 4. Parasites Next
Examples of chemicals that can accidentally get into food are: • Cleaners • Pest control sprays • Food additives (preservatives) • Degreasers (e.g., oven cleaner)
So remember: Label pest control sprays and cleaners and store them awayfrom food. If space is limited, make sure these items are stored below food to prevent spillage into the food. Store chemicals in their original containers or in properly labelled containers. Never store chemicals in containers with food labels! People will mistakenly think the chemical is a food product! They may eat the chemical and get sick.
QUIZ! Can you remember the two kinds of foodborne illness you learned about in this lesson?
1. Microbiological food poisoning. (Bacteria, parasites, fungi, viruses.) 2. Chemical food poisoning. Chemicals accidentally get into food. Excellent!
You will learn more about microbiological food poisoning – and your role in preventing it – in this week’s In Good Hands modules: • Microbiology • Foodborne illness If you have aquestion about this topic, please post it in the Food Handler Forum!
