Then it is reacted with sodium monochloroacetate to form cellulose gum. It is also known as carboxymethyl cellulose (CMC). As the name suggests, it has carboxymethyl group in its chain. It is used as a viscosity modifier and emulsion stabilizer in food. It is used in multiple food products such as ice creams, beers, jellies, jams, dairy products, cake frostings and beverages.
