  3. TYPES OF CEREALS • FLAKED CEREALS A typical formula containing pounds of grain, sugar, malt syrup, salt & enough water to retain moisture after cooking. Too much moisture reduces crunchiness and too little moisture reduces breakage. Cooking time varies depending on the grain whether it’s corn, rice or wheat.

  4. 2)GUN-PUFFED WHOLE GRAINS Grain must be cooked, followed by a rapid pressure drop in the atmosphere surrounding the grain. The steam from the grain is released as the pressure within the grain tries to equilibrate with the lower pressure surrounding it. Rice and wheat are the grains used for gun-puffing. Puffing can be done with single or multiple shot guns. Puffed cereals rely on a coating ie, sugar to maintain a crisp texture.

It is stirred to maintain a loose breakfast cereal consistencyduring the baking process. It is often eaten by mixing with yogurt, honey, fresh fruit, milk or other forms of cereal.

  6. 4) SHREDDED WHOLE GRAINS The grain is cooked, cooled, and tempered for up to 24 hours. The wheat is squeezed between one smooth and one grooved roll. A comb runs along the grooved roll to separate the shreds. These cereals has got high fiber content enriched with all the essential nutrients.
