Oils that are produced from olives that have been picked early and have a particularly high concentration of chlorophyll are dark green in color. The color of the oil changes to a brighter, lighter shade of green as harvest progresses. Spain accounts for about half of the world's olive oil production. Italy, Tunisia, Greece, and Turkey are additional significant olive oil producers. Greece, Italy, and Spain are the countries with the highest oil consumption rates per capita. The bare minimum processing is done to extra virgin olive oil. It has a distinct flavor and scent and is high in antioxidants.
