METHOD ● ● Take the peeled bananas in a bowl and mash them into a loose puree. Heat jaggery along with 2 tbsp of water until a caramel-like syrup is formed. Then let it cool. Add the grated coconut and ghee to the banana puree. Now mix this along with the cooled jaggery syrup. Keep it aside. In another bowl, mix wheat flour, all-purpose flour, baking soda, green cardamom, cumin powder and salt. Now combine the sweet puree and flour mixture together with warm water to knead it into a sticky dough. Leave the dough aside for 2-3 hours. Take a frying pan and heat Sundew refined sunflower oil. Make sure that you take enough oil to allow the banana bonda to get submerged fully. Now check for the dough to be less sticky than before and use a wet spoon or wet your hands and grab a piece of dough, roughly the size of a golf ball. Roll the dough and then carefully deep fry the dough ball in Sundew refined sunflower oil. Let the dough balls slowly fry for a few minutes until they become firm and dark golden-brown in color. Finally transfer the Banana Bonda to a bowl covered with tissue paper.
