  5. Yeast Strains • EC1118: Saccharomyces cerevisiae bayanus; natural hybrid strain • 58W3: Saccharomyces cerevisiae; Alsatian Strain that enhances aroma • Melody: Saccharomyces cerevisiae, Kluyveromyces thermotolerans, Torulaspora delbrueckii
