Custom Foods • Custom Foods are partially or completely prepared, ready to cook/serve foods • They include things like: Instant Mashed Potatoes, Condense Soup, RTU Cheese Sauce, Marinara Sauce, Frozen Lasagna, etc. • Custom Foods are designed to drastically reduce preparation times and workload

  4. Why Custom Foods? • Custom Foods drastically reduce time required in certain preparations • They also produce a consistent, quality product everytime • Can extend shelf life of items (frozen, dehydrated) • You cannot cross utilize them (generally) • They are almost always more expensive that the ingreidents would be seperately (paying for labor)

  5. Preparation • Simplifies the preparation process for CS’s • Always follow instructions on the PACKAGE (trumps recipe card) • Nothing says you can’t take it further! Don’t be afraid to add an extra touch, enhancing quality of the product (i.e. browning an Italian cheese blend on frozen lasagna)

  6. Examples • Dehydrated: Mashed Potatoes, Vegetables, Gravy Mixes, Soups • Frozen: Vegetables, Lasagna, Breaded Veal, Chicken Nuggets, Biscuits • Canned: Ravioli, Beef Stew, Condensed Soups, Sauces (Cheese, Marinara), Baking Mixes
