This lecture explores consumer concerns regarding nutrient quality in foods and how it affects metabolism. It also discusses various factors such as genetically modified foods, bacteria, viruses, prions, pesticides, ultraviolet irradiation, nutritional supplements, and the impact of hunger and global food issues on metabolism.

Lectures 12a,b Outline Consumer concerns about foods relative to metabolism Hunger and global food issues relative to metabolism
Consumer concerns about foods relative to metabolism Nutrient quality refers to foods that will supply all 6 aspects of good dietary planning increasingly there is an understanding of the importance of good nutrition and the type of diet that supplies good nutrition
Nutrient quality -food grown, harvested, stored, shipped and kept at store in a way that gives people confidence that their food choices meet the 6 aspects of good dietary planning -in short, people want to be sure that food will satisfy aspects of their metabolism that food is meant to address -concerns are irrational
Genetically modified foods -concern about such foods in modifying human DNA thus affecting all aspects of our metabolism -concern about such foods having a modified genome thus producing molecules in our food that will interfere with our metabolism -concerns are irrational
Bacteria -bacteria and immune response utilising nutrients -bacteria producing chemical entities that interfere with our metabolism of our food -illness causes problem with appetite -concerns are rational
Viruses -viruses and immune response utilising nutrients -illness causes problem with appetite -concerns are rational
Prions -affect brain and hence ability to feed self and perhaps make appropriate food choices -concerns are rational but minimal risk in Canada
Pesticides -metabolic inhibitors -concerns are rational but minimal risk in Canada
Ultraviolet Irradiation -damage DNA of food causing incorporation of mutated DNA into our genome -significant loss of nutrient content and/or producing molecules that will harm our metabolism -introduction of radiation into food -concerns are irrational
nutritional supplements -diet/drug interactions -toxicity -lack of efficacy -consistency of active agent(s) from batch to batch -poorly conducted clinical trials (low numbers, poor experimental design) -marketing hype -inaccurate labelling of ingredients (qualitative and quantitative issues) -all above may give interference with metabolism (DAT, metabolism, excretion) -concerns are rational- eg ephedra in power bars
Hunger and global food issues relative to metabolism Food security politics-war declared and undeclared -food as a weapon
Hunger and global food issues relative to metabolism Food as a way of control in a military pact or political block -Poland- Warsaw pact -East bloc countries
Hunger and global food issues relative to metabolism Trading blocks -agricultural subsidies- other countries cannot compete
Hunger and global food issues relative to metabolism Global warming -Kyoto/Copenhagen/Paris and greenhouse gases
Hunger and global food issues relative to metabolism Economic -rich countries not supplying enough money to poorer countries or ensuring that those poorer nations spend the money wisely
Hunger and global food issues relative to metabolism Socioeconomic -poorer people with poorer jobs or social standing may not have the money to buy sufficient amounts of higher quality food
Hunger and global food issues relative to metabolism Nutrient quality - all of the factors above affecting hunger and global food issues affect the quantity and quality of food available and hence affect all metabolic aspects in humans
