  2. Nutrients • Dairy foods are rich in protein, vitamin A, calcium, and often fortified with vitamin D • Many contain saturated fat and cholesterol • Some (like cheese) are high in sodium

  3. Daily Intake • You should have 3 cups daily of a dairy food • 1 cup equivalents; • 1 cup milk • 1 cup yogurt • 1.5 oz cheese • Make smart choices by reading labels and choosing low-fat or fat-free options

  4. Terms • Pasteurization – heat-treated to kill any harmful bacteria • Homogenized – processed to make fat break into small particles and distribute evenly throughout the liquid

  6. Yogurt • Made by adding special bacteria to milk • Bacteria also helps keep the digestive system healthy • Plain yogurt is the best for you • Flavored yogurt contains added sugar, artificial flavors, or real fruits…..make your own flavors!

  7. Cheese • Concentrated form of milk • An enzyme (like rennin) is added to milk, milk thickens and separates into solid clusters (curds) and a thin liquid (whey), finally whey is drained from the curds

  8. Types of Cheese • Fresh • Cheese that has not been aged • Cottage, cream, ricotta • Ripened • Aged cheese made by ripening agents (bacteria, mold, yeast) • Time depends on kind of cheese • Firm (grated) • Soft (hard edible crust soft on inside) • Blue-veined (certain molds added)

  9. Storing • Highly perishable • Return to refrigerator as soon as possible • Refrigerate in original container • Closed tightly (or will pick up aromas)

  10. Cooking • Sensitive to heat • Stir continuously or scorching can occur if overheats
