Learning Objectives To understand the function of food packaging in safeguarding food supplies
Why Package Food? • To protect from damage during transportation and storage • To preserve freshness • To prevent contamination from dust, flies and bacteria • To inform consumers about the product • To enhance the appearance of products
Remember Three P’s an I and an E Protect – Preserve – Prevent – Inform - Enhance
Packaging Plastics are very versatile and can be used for a wide range of foods including milk, yoghurts, drinks bottles, fruit and veg boxes and ready meals
Plastics • Disadvantages • Not as strong as glass/metal • Made from hydrocarbons • which are in limited supply • Some are not recyclable and • have to be put into landfill • Advantages • Lightweight • Waterproof • Moulded to shape • Clear or coloured • Can be printed with • information • Can be used for vacuum • packing
Paperboard Not as strong as plastic Strong Lightweight Will crush easily Made from renewable sources Not moisture proof Food will dry out Recycled
Metals Aluminium containers are widely used for ready meals and drinks. Canned food is one of the oldest methods of preserving food and includes fruit, vegetables, fish, meat, soups, custard and rice pudding
Metals Production uses a lot of energy Strong and Rigid Good protection Long storage Cannot put metal into microwave Recyclable
Glass This is widely used for jams, pickles, sauces, baby food and milk Rigid Moisture-proof Good Protection Recyclable Brittle Breaks easily Heavy to carry
New Developments in Packaging Manufacturers are constantly developing new types of packaging: to make food more appealing safer to eat environmentally friendly
Tamper-proof seals • These prevent: • Deliberate contamination of food • Reassure consumers about its safety
Ring Pull Cans • These are widely available on a variety of food products: • Drinks • Soup • Fruit • Vegetables • They are easy to use for the • elderly/disabled
Vacuum Packaging This method removes the air so the product will keep for longer. • Can be used for: • Meat • Cheese • Coffee
Modified Atmosphere Packaging MAP Oxygen is removed from the packaging and replaced with an inert gas such as carbon dioxide or nitrogen. This slows down the food spoilage and the development of micro-organisms. • Used for: • Ready- meals • Meat • Fish • Salad leaves
Summary Packaging is used to: Protect – Preserve – Prevent – Inform - Enhance Plastics are made from hydrocarbons which are becoming scarce Production processes for metal uses a lot of energy
