Tis the season to top up with vitamin D It can sometimes be a difficult time of year to stay healthy and positive. So what can be done to improve how we feel? One way of countering the effects of the season and boosting our immune systems is to boost our vitamin D levels. What is ‘the sunshinevitamin’? Our bodies produce vitamin D when exposed to sunlight - hence why it is known as ‘the sunshine vitamin’. In climates furthest from the equator, especially in the winter months, vitamin D deficiency is common due to a lack of sunlight and as we age our ability to produce vitamin D also declines. Small amounts of vitamin D are also found in beef liver, cheese and egg yolks. As very few foods naturally contain high levels of vitamin D, some fortified foods have been introduced in the US (e.g., milk, margarine, cereals), which constitute the major source of vitamin D in the American diet; unfortunately these are not currently available in the UK.
