  2. What are food additives? Food additives are substances (chemicals) added to food to preserve, flavour, or enhance a product in some way.

  4. Food Additive Uses Antioxidants Colouring Emulsifiers Anticaking Agents Flavouring Glazing Agents Preservatives Sweeteners Thickeners

Common Food Additives • Acesulfame potassium – artificial sweetener • Acetic acid – sour taste enhancer • Ammonium bicarbonate – preservative • Aspartame – artificial sweetener • Betanin – red colour • Boric acid – preservative (now banned) • Brown FK – colour (brown/black) • Butane – propellant

  6. MSG – Monosodium Glutamate

  7. MSG MSG is a flavour enhancer. It is derived from the amino acid glutamate(10-25% of food protein)MSG is NOT regulated by Health Canada Produces a savoury taste (addictive!!!)

  8. Potential side effects of MSG Affects lipid hormone activity (in high levels) Allergic reactions (nausea, headaches, etc.) Injected MSG in monkeys caused holes to form in the central nervous system nerve fibers -EpilepsyNew studies may link it to Alzheimer’s and multiple sclerosis
