  2. Vegetable oils • Vegetable oils are important nutrients that provide energy. Watch what you eat otherwise you’ll become overweight. • Vegetable oil also used for car fuels, AKA biodiesel. Some is made from waste cooking oil + rapeseed oil. Vegetable oil These help to reduce global warming.

Emulsions • Vegetable oils don’t dissolve in water. • If a mixture of oil +water is shaken, eventually a layer forms. • If an emulsifier is added to the oil and water, that’s called an emulsion. • Emulsions aremore viscous than oil or water if they are on own. Egg yolk, milk and ice cream are all emulsifiers

  4. Trans fats • Partially hydrogenated vegetables contain Trans fats. • These are thought to have cause health problems e.g. heart disease. • Food manufacturers are encouraged to reduce the trans fats in their foods. Trans fats
