  3. Features of a Restaurant Business1. The Concept • The first thing a restaurant owner needs to decide when opening a restaurant is the “Concept” what type of restaurant do they want? What are the different concepts we discussed in Lesson 1. • Fast Food • Fast Casual Dining • Cafes • Pubs • Casual Dining • Buffet • Fine Dining

  4. ACTIVITY 1 • In groups of 3 list 3 different types of foods for each of the following Restaurant Concepts • Fast Food • Fast Casual Dining • Casual Dining • Buffet • Fine Dining

  7. Different Concepts with Different Styles of Service FAST FOOD • Fast Food Restaurants emphasize on speed of service. • Counter service only, no table service Street Vendor KFC

  8. FAST CASUAL DINING • Counter Service, No Table service • Usually provide customer with plastic cutlery and paper plates • The quality of food and prices higher than Fast Food Restaurants but cheaper than Casual Dining

  9. CAFES • Counter Service and Casual Table Service. (Counter Service to place your order and waiters will serve food and drink to the table) • Casual Atmosphere • Hot drinks are the main selling items e.g. Coffee and Teas • Cafes provide a limited selection of Cold & Hot Foods, Sandwiches and Pastries

  10. PUBS & BARS • Counter Service • Casual Atmosphere • Primarily serve Drinks mostly Beers, Secondary is Food which is simple foods such as burgers, fish and chips, steak and chips.

  11. CASUAL DINING • Provides table service in a casual atmosphere • Provide Food and Drinks Menus • Prices are moderate- more than Fast Casual Dining but less than Fine Dining Restaurants • Popular for Family and Friends to enjoy a good meal together

  12. BUFFET DINING • Self Service • Drinks Menu and Drink Service Provided • Waiters Clear Plates and Clean Table • Prices are moderate- more than Fast Casual Dining but less than Fine Dining Restaurants

  13. FINE DINING • Provide Full Service • Well Trained Staff (Professional) • Provide good quality foods and wines • Prices are on the high end

Restaurant FeaturesThe Design The Design should complement the Concept & Theme For example • An Italian Casual Restaurant should give the feeling you are in an Italian Restaurant. • An Irish Pub should feel and look like its an Irish Pub • A Fine Dining Restaurant should have fine chinaware, glassware, silver cutlery and usually white table cloths

  17. Fast Food Design When Designing a Fast Food Restaurant it should include: • A Counter • A Kitchen behind the Counter • Tables and Chairs for maximum number of customers • Bathrooms

  18. Fast Causal Restaurant Design When Designing a Fast Food Casual Restaurant it should include: • A Counter with a display of food for Fast Service • A Kitchen behind the Counter • Tables and Chairs for maximum number of customers

  19. Café Design There are many designs of Cafes but generally they should include; • A Service Counter • A display of foods such as Pastries • Tables and Chairs • Coffee Counter • Bathrooms

  20. Pub and Bar Designs There are many types of bars such as a Sports Bar, Irish Bar, German Bar Bars should include; • Bar Counter • Selection of Different Beers • Dining Area with Table and Chairs • Television especially for Sports • Snooker Table (Optional) • Bathrooms

  21. Casual Dining RestaurantsDesigns • A Bar • Decorations based on the Theme e.g. Mexican, Indian, Italian • Tables set up for Couples, Small Groups and Large Groups • Bathrooms

Buffet Designs When Designing a Buffet Restaurant it should include: • A Reception Area with Reception Desk • A Bar • Food Stations e.g. Soup, Salads, Meat, Asian, Western, Desserts • Space, So that there is no traffic jam when people are selecting their foods • Tables set up for Couples, Small Groups and Large Groups • Decorations to suit the Theme e.g. Chinese, Christmas • Bathrooms

  23. Fine Dining Designs When Designing a Fine Dining Restaurant it should include: • A Reception Area with Reception Desk • Fine Chinaware, Glassware and Silverware (Cutleries) • Wine Display • Very good quality Chairs and Tables • Impressionable Bathrooms

Restaurant’s names can be decided on either • Location Example Sydney  Café Sydney • Theme Example Decor is Red  Red Sky • Menu Example Chinese  Chopsticks • Personal Meaning Example Your Mother’s Name  May’s Kitchen
