Step 3 Stir the mixture well. Try to keep the mate and sugar fairly evenly distributed across the pan. www.buenaondafoods.com
Step 4 The sugar will begin caramelizing. As this happens some of the yerba mate leaves will become toasted. Continue to stir. It is easy to burn the mixture, so watch out! www.buenaondafoods.com
Step 5 After some of the mate is toasted and the sugar is caramelized, add 4 cups of boiling water. Be careful as you pour the water as there will be lots of steam. www.buenaondafoods.com
Step 6 Stir the mixture over continued heat until the sugar has dissolved. This usually takes 2 minutes or less. www.buenaondafoods.com
¡Buenprovecho! Let the mixture cool and settle for a few minutes. Strain the tea into a mug being careful not to get the leaves into your cup. You can reuse the toasted leaves in your gourd until they are lavado. Enjoy!! www.buenaondafoods.com
