Belgian Recipes: Chocolate mousse • For 6 people: • Ingredients: • -3 eggs • -180 g sugar • 250 g milk or dark chocolate • 500ml whipped cream • Preparation: • Combine the eggs and sugar in a pot, heat gently (no more than 36 degrees Celsius). Beat until foam appears. Melt the chocolate au-bain-marie (not directly on the stove, but placing a smaller pan with the chocolate in a bigger pan containing water), mix the chocolate with the foamy egg mass. Beat the whipped cream until firm, and add to the chocolate mixture. Leave in the refridgerator overnight until mixture is firm.

Belgian Recipes: Belgian Endives • Website with more recipe and information on Belgian endives: http://www.belgianendive.com/ • For 4 people: • Ingredients: • -8 whole heads Belgian Endives • -8 slices of Black Forest ham • 4 table spoons vegetable oil • 2 table spoons flour • ½ cup grated mild cheese • 2 teaspoons grated parmesan cheese • Salt and pepper to taste • Preparation: • Remove the end of each Belgian endive, and remove the outer leaves. Saute the belgian endives lighlty in a frying pan. Add a bit of water, leave on stove for 20 minutes. • Mix oil with flour in a separate pan, stir until lightly brown. Add salt and papper and nutmeg to taste, add in cheese and blend until cheese is melted. Wrap each endive in a slice of Black Forest ham. Place the sauteed Belgian Endives in an ovenproof casserole. Cover with cheese sauce and place in a 350° F oven for about 20 minutes or until sauce is bubbly and brown. You may brown it under the broiler for a minute or two if you wish. Garnish with chopped parsley and serve hot.
