BIOLOGY CHALLENGE—COMMON CORE STANDARD TWO--CELLS Science language students should use: • organelles, photosynthesis, respiration, cellular respiration, osmosis, • diffusion, active transport, homeostasis, cell theory, organic, • carbohydrate, fermentation, protein, lipid, nucleic acid, enzyme, • chlorophyll, cell membrane, nucleus, cell wall, solvent, solute, adhesion, • cohesion, microorganism, mitosis
Teacher needs assessment of STEM-Enhanced Food and Nutrition 1 curriculum
Purpose and objectives • To evaluate teacher perceptions involving the new Food and Nutrition 1 stem-enhanced curriculum 2. To determine barriers to implementation of new curriculum 3. To provide a profile of current FCS teachers
Teacher recommendations for pre-service • More Food science—45% • More nutrition/dietetics—45% • More chemistry—14% • More math education—10% Note: teachers allowed more than one answer
BARRIERS TO IMPLEMENTATION • TIME—37% • RESOURCES—34% • CURRICULUM—24%
UNEXPECTED BARRIER • Six new stem-related labs offered • On Average, 60% “did not use” • 59% of respondents “unaware the labs existed”
Six new labs • How Clean is Clean? –Karin Allen—Sanitizing your kitchen • What Does it Matter—using food to demonstrate how matter changes • Better Butter—dispersed and continuous phases, changing from Oil-in-water to water-in-oil • Leavening Agents—yeast demonstrations with balloons • I Second that Emulsion –Institute of Food Technologists (IFT) • Baffling Beaters—colloids, pH, stabilizing egg whites—IFT
BEST RESOURCES • The FACS Summer Conferences Workshops ALSO RANS: • Quick Reference Guides for each Strand • Reference highlights • Links • Websites • Vocabulary • Nutrition and Cost Analyses for Performance Objectives • Done on recipes you sent in
Future Research • Student STEM self-efficacy pre- and post- Food and Nutrition 1 • Development of edible, science-oriented labs • Specific NDFS endorsement • I was told this was already happening Email me if interested in participating!!
CONCLUSIONS • Teachers feel the curriculum is very important • Teachers feel competent to teach the curriculum • TIME is a major barrier • New materials need better advertising • UEN File Cabinet has STEM icon • Now dates the material as it goes in
