How To Make Mushroom Risotto
INGREDIENTS 1½cupsArboriorice 450gmushrooms – Sliced. Usewhichevervariety youlike, beitwhite, portobello, chestnut, oreven acombination. ⅓cupgratedParmesancheese 5-6cupshomemadechickenstock – keep simmering ½cupdrywhitewine 2shallots – chopped 4tbspbutter Saltandpepper, totaste 2tbspoliveoil
METHOD Take2tablespoonsofbutterinalargefryingpanandkeepitonlow heat. (Ifyouheatthepanbeforeputtingthebutter, thefatwould instantlyburnoff, sinceithasalowsmokingpoint.) Oncefullymelted andfoaming, sendthemushroomstumblingintothepan. Sprinkle withsaltandstirthoroughlysothattheMushroomswell-coatedin butter. Cook, stirringoccasionally, untiltheyarebrowned. Removethe panfromheatandtransferthemushrooms & allofthepanjuicestoa bowl. Returnthesamefryingpantolowheatandaddtheoliveoil. Once warm, stirintheshallotsandcook, stirringfrequently, untilsoftened (10minutes). AddtheArborioriceandmixuntileverygrainiscoatedin oil. Allowthericetobecomeslightlygoldenandpourinthebooze. You shouldnowallowtheArboriotofullyabsorbthewhitewine. The alcoholwillburnoffandtheflavourwillbesoakedupbytherice. Oncetheliquidinthepanhasbeencompletelyabsorbed, addaladle ofhotstock. Stir, allowingthestocktobeabsorbedtoo. Stirtherice, encouragingittoreleaseitsstarch. Thiswillstartturningtheliquid intoasilkysauce. Addanotherladleofstockastheliquiddriesup.
FINAL TOUCH Bythetimethelastbitofthestockisadded, thericewouldhave softened, yetwouldbealdente. Thismeansthatthe ‘soul’ oftherice wouldstillretainabite. Atthispoint, addthebrownedmushrooms andanyjuicescollectedinthebowl. Stirintheremainingbutterand thecheeseuntileverythingisnicelyincorporated. Portionoutonto platesandserveimmediately!
