  1. Canister Whipped Cream Canister Whipped Cream A canister of whipped cream can be a quick, easy, and inexpensive way to make delicious toppings for cakes, pies, cookies, and hot chocolate. It doesn’t have any added sugars or flavors and requires only three ingredients and a canister to make a batch. However, it is important to follow the instructions and keep the canister properly charged to avoid accidental explosions and chemical leakage. Whipped cream made in a canister is much easier to handle than that which is piped from a nozzle. In addition, it does not require an electric beater or a stand mixer and can be ready to use in minutes. It also does not contain any gums, additives, or emulsifiers that are typically found in store-bought whipped creams. If you’ve ever had trouble with making whipped cream using a canister, there are a few reasons why this may be happening. First, if the cream is warm, this can affect its consistency. To fix this, place the canister in the refrigerator to chill. Second, if the whipped cream is too runny, it’s possible that you have not shaken the canister enough times. To fix this, simply shake the canister a few more times. Finally, if the whipped cream is not dispensing correctly, it could be that you have a blocked nozzle from poor cleaning. To fix this, remove the nozzle from the canister and wipe it down with a clean towel or cloth. The canister of whipped cream that Starbucks uses to top its beverages is a brand called an iSi Professional Whip with a max filling capacity of 1 pint. It comes with a holder that holds 8-gram nitrous oxide cream chargers (N20). These are sometimes known as “cream chargers”, whipped cream cartridges, nangs, or whippets. Nitrous oxide is used because it creates a very stable whipped cream, and it doesn’t degrade in the canister or dispense into the food like CO2. To make canister whipped cream, pour your cold whipping cream into the canister up to the fill line. Add in a tsp or more of vanilla, and if you don’t want to add any sugar, you can try some Vanilla Powdered Monk Fruit Sweetener. Screw on a N20 charger, and give the canister a few good shakes. When you’re ready to serve, hold the canister upside down and press the lever gently. While a canister of whipped cream is ideal for home cooks, it is also a popular item for commercial venues such as bakeries, cafes, and restaurants. They are capable of quickly aerating cream, saving time when making milkshakes, whipped cream for fruits or desserts, and more. These canisters are also useful for adding texture to components of savory dishes, such as foams, hollandaise, and infusions, as well as creating cream for hot drinks, such as lattes and cappuccinos. They are also ideal for storing delicate mixtures. These sealed canisters are not exposed to air, which prevents spoilage and oxidation, and they are safe for freezer storage.
