Cranberry Relish • Onset: • 24 hours – 1 week • 5 days – 3 weeks after ingestion, central nervous system, heart, eyes, or other locations are infected • Symptoms: • Fever • Muscle aches • Gastrointestinal distress • Headache • Stiff neck • Loss of balance • Confusion • Decreased consciousness • Convulsions • May mimic a stroke • Pregnant women: flu-like symptoms

Listeria • Ingested through contaminated foods • Goes through a normal gastrointestinal tract to the blood stream • Bacteria get inside cells • Also produces toxins • Grows best in the central nervous system • Meningitis and/or encephalitis (brain infection) • Pregnant women: fetus can become infected • Spontaneous abortion, stillbirths, or blood infection in infancy.

  4. Getting Better… • Blood or spinal fluid test is done to detect the infection • During pregnancy, a blood test is done • Contact your health care provider • Several antibiotics work • During pregnancy, antibiotics can often prevent infection of the fetus.

  8. Getting Better… • Can be diagnosed by clinical symptoms alone or stool sample • Early administration of botulinal antitoxin • Intensive supportive care (including mechanical breathing assistance)

  9. Prevention … • Use only commercially canned or smoked products • Refrigerate olive oil and garlic • Discard bulging canned goods • Refrigerate foods • Rapidly chill in small quantities

  13. Getting better… • Diagnosed by stool sample • Treatment with antibiotics • Call doctor right away to avoid blood infection
