FIRM - Food Institutional Research Measure Objectives: • To provide a base of information & expertise in generic technologies that will support innovation & product development in the food industry • Create a Critical Mass through Collaboration • To assist in assuring consumer protection & in ensuring that product / process development is underpinned by attention to food safety & quality issues

Food Manufacturing & Processing Technologies • Process design, process optimisation, process modelling and problem solving in the food industry; b. Development of the scientific capability in i. food formulation, ii. food ingredient interaction including flavour & texture preservation; iii. sensory analysis
New Uses for Food & Drink By-products a. Development of the scientific capability to extract functional ingredients from existing food by-products; b. Extraction and exploitation of valuable components arising from food processing systems for food and non-food use
New & Innovative Food Ingredients & Products • Novel and/or biofunctional ingredients – their delivery and application in the meat, beverages, cheese and snack food sectors. • Development of healthy snack products for the cereal and vegetable sector. • Diversification of the cheese product portfolio including new and innovative applications for cheese and ingredient-type cheese
Food Quality & Safety • Emerging foodborne pathogens and control strategies; • Safety of fresh produce including novel / practical methods for decontamination; • Novel intelligent & sustainable packaging solutions to enhance food quality, safety & shelf life; • Development of technologies and systems to enhance the operation of the poultry industry.
Frontiers Research • New bioactives from plant, animal and microbial sources • Bioprocessing technologies of new food ingredients “exploring the science base for new ideas to create future opportunities for the food industry and future benefits for society” Small single institution projects
Dissemination Projects are invited that • Build on the development of RELAY • Take on board recommendations of DAFF Value for Money review • Address the knowledge needs of the food industry

Stage 1 - Preliminary Assesssment by DAFF • Completeness check • Verification of proposal eligibility • Assignment to expert evaluation panel

Stage 2 Panel Evaluation Meeting (facilitated by DAFF moderator) • Discuss & evaluate each project proposal • Make recommendations / suggestions • Agree a consensus mark • Complete evaluation summary report • Rank proposals
Stage 3 FIRM Committee • Proposals must achieve 3/5 for SE &F and overall mark of 60% to be considered by FIRM Committee • Committee determine indicative levels of funding • Recommend funding of successful proposals • All applicants notified of result
Awards • All co-ordinators of successful proposals notified of award • Recommendations of expert panel considered in revised proposal • Final contract negotiations • Research contract signed by Institutions
Project Management • Co-ordinators – talk to your collaborators - report on progress • 6-monthly reports • Financial deductions • Be accurate • Reveal issues! • Consider what you said you would do!
