What Is A Noodle? • A strip or piece of unleavened dough that has been shaped and sometimes dried • Two types of noodles • Rice Noodle • Wheat Noodles
Ingredients Of Noodles • Rice Noodle • Rice or rice flour, water
Ingredients Of Noodles • Wheat Noodles • Wheat flour, water, eggs • Variations – Semolina flour, AP flour, oil

Machine Manufactured • More efficient, less labor intensive • Preparation • Combine raw material(desired flour) with water • Form dough, make into sheets • Chill at 32-35 degrees for 30 mins-1 hour • Roll sheets into desired thickness • Cut into shapes and sizes • Dry and package (can be hot air dried)
