FREEDOM HILL WINES HISTORY - Freedom Hill is situated on the border of Paarl WO & Franschhoek WO areas. - Latter part being the historic town where the French Huguenots settled in the late 1600’s, early 1700’s after fleeing France with the “Edict of Nantes”. - They brought with them vineyard- and wine making skills and played a major role in establishing the South African wine industry. - Majority of the varieties planted on our farm are French varieties like Cabernet Sauvignon and Shiraz; as well as our own locally cultivated variety called Pinotage. - Most wine farms in the Franschhoek area still have their original French names. - Freedom Hill Wines’ unique names stem from the fact that our farm overlooks the now famous Victor Verster Prison (now called Drakenstein Prison), where our great folk hero and ex president, Nelson Mandela spent his last 3 years (1998 – 1990) before finally taking those first steps to freedom. - As he was walked out of the prison-grounds he looked straight onto the Wemmershoek mountain where our vineyards are planted today. - Owner, Francois Klomp, an engineer by profession, bought the beautiful 82ha farm in 1997, of which 20ha under vineyards. - They first named it Klompzicht and, combining their talents with those of a small, inspired team, set out to develop it into what has become a model boutique cellar. - Freedom Hill Wine range released in 2004.

FREEDOM HILL WINES OUR WINEMAKER – FRANCOIS NAUDÉ Assisted by Kowie du Toit “At Freedom Hill the gifts of nature combine with the passion and skills of our winemaking team to create wines of distinctive character, abundant flavour, superb balance and stylish finesse”, says wine maker Francois Naudé. - His aims:- to produce wines of a classical nature that reflects our spesific terroir somewhere between the New World’s upfront fruity wines as opposed to the classic French and European wines with more restraint and great fruit / tannin balance. - Extremely successful winemaker at L”Avenir Wine Estate in Stellenbosch for many years, where he earned many awards locally and internationally for his wines.- Since his semi-retirement at the end of 2005 he has concentrated on sharing his knowledge and experience as a reputed wine consultant. - We are very fortunate to have him as part of our team and he works closely with Kowie du Toit, the ex cellarmaster of Stellenbosch Hills - a position he held for many years. Also assists our vineyard- and farm manager Chris Immelman. - 50 years of wine making experience between the two wine makers. - Trophy (for the best Pinotage in the world) three times.

FREEDOM HILL WINES PRODUCTION CAPACITY - The focus is mainly on red wines. - Varieties:- Shiraz, Cabernet Sauvignon and Pinotage and are thus all grown on our unique terroir. - All vineyards are extensively managed & manicured to produce even ripening & low yields to produce optimum quality wines. - Grapes are handpicked into small crates, after which it is transported to Stellenbosch Hills for processing etc. - To ensure that every wine reaches the peak of perfection, all varieties are matured for 12 to 24 months in small oak barrels, prior to blending and bottling.  - The small annual production of between 40 000 and 50 000 bottles per year ensures attention to detail.

FREEDOM HILL WINES PRODUCTION CAPACITY Benefits of Stellenbosch Hills as our “service-cellar” : - Because of our size it is more cost effective and efficient than building our own at this stage. - We have our own tanks and access to their extensive range of tanks. - A large, temperature-controlled barrel maturation cellar that houses all our small oak barrels seperately. - Access to all their well equipped winemaking facilities; trained labour force and laboratory. Additional advantages: - Wine makers live closer to Stellenbosch Hills and have quicker and easy access to the cellar for management of wines. - Facilities, space and options available to increase production if needed. We see our wine drinkers as genderless and of all ages, people who are serious about their wine. Those who enjoy new wine experiences and like a specific type of wine that tells its own story."

FREEDOM HILL WINES CHARACTERISTICS OF WINE Why we have a unique terroir in Paarl Wine of Origin area: - As mentioned, it borders the Franschhoek WO, separated only by the cutting in the mountains that was created to build a road leading to Paarl and Wellington. - The strong prevailing southeaster wind blows from Franschhoek towards Paarl and the cutting acts like a venturi as the wind blows through and onto our vineyards planted on the other side against the mountain; creating a very cool micro-climate. - Thus temperatures on Freedom Hill are much cooler than average for Paarl WO and more resembles mountain vineyards in Stellenbosch, but, with different soils! - Cooler climate results in better retention of fruit flavours and slower ripening produces riper and softer tannins; both ideal to make classic elegant wines. - Fairly high percentage sand in soil. - Cool breezes increase evaporation of moisture out of the soils & therefore carefully calculated and precise irrigation is necessary for the vines to deliver optimal quality rather than maximum yields. - Optimal quality gives low yields, intensity of fruit and ripe tannins. - Longer maturation of wines, through barrel and bottle, ensures abundant flavours that pairs well with food.

Ripe plums, sweet black cherries, spice and a whiff of oak on the nose. Complex fruity flavours combined with ripe tannins, ensures a perfectly balanced and long aftertaste. Lovely intense nose of black current and ripe plums mingled with mixed dried herbs and oaky vanilla spice. The palate is rich and fruity with a touch of cinnamon that is carried to a long and pleasing finish by perfectly integrated ripe tannins. Ageing Potential Ageing potential is 5 years.
