  1. 1. Obtain dropper 2. Set up dropper #1 as shown in the picture below • Air hookup • Dropper pump

  2. 3. Get crumbed pans and trays 4. Wheel full mixing bowl to dropper suction and set up dropper 5. Wheel empty rack to dropper area

  3. If making Marble Cheesecakes: 6a. Drop batter into yellow buckets • XX yellow buckets 7a. Wheel full yellow buckets to marble area 8a. Drop batter into pans • Use 1 dropping per pan (fills pan halfway) Switch lever

  4. If making One flavor/Plain Cheesecakes: 7b. Drop batter into pans . • Reweigh pan. Ensure weight is correct per the recipe (1.18 +/- 0.02lb) 8b. If not: recalibrate and weigh 6b. Weigh one pan (without batter) • Tear weight on scale

  5. 9. Fill rack from top to bottom (both sides) 10. Wheel full rack to tunnel oven load queue

  6. 11. Change mixing bowls when necessary • Put yellow bucket under suction to catch excess batter 12. Wheel empty mix bowl to mixer to be scraped by mixing employee.
