If making Marble Cheesecakes: 6a. Drop batter into yellow buckets • XX yellow buckets 7a. Wheel full yellow buckets to marble area 8a. Drop batter into pans • Use 1 dropping per pan (fills pan halfway) Switch lever
If making One flavor/Plain Cheesecakes: 7b. Drop batter into pans . • Reweigh pan. Ensure weight is correct per the recipe (1.18 +/- 0.02lb) 8b. If not: recalibrate and weigh 6b. Weigh one pan (without batter) • Tear weight on scale
9. Fill rack from top to bottom (both sides) 10. Wheel full rack to tunnel oven load queue
11. Change mixing bowls when necessary • Put yellow bucket under suction to catch excess batter 12. Wheel empty mix bowl to mixer to be scraped by mixing employee.
