AA • Clean, no cracks, correct shape • Albumen tight around yolk • A • Mostly good, clean • Albumen a little spread out • B • Not clean, misshapen • Albumen spread out, flat yolk EGGS
Sizing of Eggs • Egg size is determined by weight. • Each carton contains eggs of similar weights. • Grade quality and weight are not related. • 6 sizes of eggs: Size Weight
